We’ve been testing out a protein pancake recipes, but finally settled on this one – and they’re delicious! 4 ingredients and 10 minutes is all that sits between you and a delicious meal, snack or post-workout treat.
The ingredients
- 1 ripe banana
- 25g of porridge oats
- 1 scoop of whey protein
- 1 egg
For the pan:
- Coconut oil / fry light
The instructions
Chop up the ripe banana in to small chunks and throw them in a blender. We use a nutribullet, but you can use a hand-blender and a bowl. Then add in the oats, whey protein and 1 egg. Blend until smooth.
Once smooth, heat a non-stick pan to medium heat and add around 1 teaspoon of coconut oil or a few sprays of fry light. Spoon the mixture on to the pre-heated pan. You want the pancakes to be small and thin – try fit 4 pancakes in a large pan.
Allow them to cook for around 45 seconds before flipping. You’ll soon learn if this is too long or too little! Reapply coconut oil or fry light if you need to, then pour more mixture on the pan.
And voila – protein pancakes! You can add your favourite toppings; we love nutella and peanut butter, but adding your favourite fruit is always a win (try blueberries and honey.. mm)
